Question:
I just want to be sure I make the right connection in relationship to the truck side and trailerside. What color is white wire ground from trailerside connected to truckside wire color, and how is it grounded?

The white wire on the Hopkins Multi-Tow 7-Way Blade and 4-Way Flat Connector # HM11141144 that you referenced is for ground. This wire simply needs to be attached to a clean, bare metal surface on the vehicle's frame. The white ground wire from the trailer side connector will also be attached a clean bare metal surface on the trailer frame.
The remaining wire functions on the Hopkins 7-Way are as follows:
Brown - Running Lights
Yellow - Left Turn/Brake Light
Green - Right Turn/Brake Light
Purple - Backup Light
Blue - Electric Brake Output
Red - Auxiliary Power
