Recently purchased a 2019 half ton towable 5th wheel. What’s the best set up for clearance between the trailer and cab?

There are a couple of ways you can get increased clearance between the truck cab and the 5th wheel trailer when making tight turns. In your picture it doesn't look like you have a hitch yet so the most cost effective solution is going to be a sliding 5th wheel hitch. I recommend a Demco HiJacker auto-sliding hitch. That way you don't have to get in and out of the truck to operate the sliding mechanism.
I assume that your 2015 GMC Sierra 1500 is a short bed but it is the really short 5-1/2 foot bed or the standard 6-1/2 foot short bed?
If you have the 5-1/2 foot bed I recommend the Demco 13K HiJacker # DM8550040 with install kit # DM8552027-71, This is the above the bed rails set up. If you want a below the bed set up where the bed is clear when the hitch is removed then you would need hitch # DM8550041 and install kit # DM8551008. In either case these 2 hitches can travel 22-1/2 inches so clearance won't be an issue.
If you have the 6-1/2 foot bed then I recommend HiJacker # DM8550034 with install kit # DM8552027-71 for above the bed OR # DM8550022 with install kit # DM8551008 for the below bed set up provided the truck has a double cab. Please note that none of these install kits will fit if the truck has the MagneRide suspension. These hitches have 14 inches of travel for clearance.
