So this rollover valve prevents the aux tank from overfilling the main tank correct?

The rollover valve that you see installed in the install video for the DeeZee Bed Aux tank part # DZ91752X is designed to prevent the tank from leaking fuel everywhere in the event of an accident where the vehicle would end up upside down.

It also works to prevent fuel leak during sudden stops or rough terrain.

What stops the main fuel tank from overflowing when the aux tank in the bed is open?

The Connector Kit # DZ97960 for the DeeZee Auxiliary Tank # DZ91752X doesn't have any kind of automatic shutoff valve built in. This is really just something you will need to keep an eye on when filling up the main tank.
