The first thing you will want to check is the owners manual for your 2015 Chevy Equinox. The manual contains the manufacturers recommendations and procedures for towing. Often times they recommend a break-in period on new vehicles before you can tow.
But I checked with Chevy and they have a nice trailering guide pdf you can look at. It indicates that the 4 cylinder 2015 Equinox has a towing capacity of 1,500 pounds. When properly equipped the 6 cylinder models can tow up to 3,500 pounds.
Considering the information above I do not recommend towing the 2,500 pound boat with this vehicle. You could end up with transmission and engine problems, suspension problems and excessive tire and brake wear all of which are expensive to fix. A different, higher capacity vehicle should be used. Or a boat and trailer that weigh under 1,500 pounds.
