Our only 68" long tandem axle fenders are 9" Wide x 68" long x 17" tall so you would not have enough clearance for that size of tire.   You will not have any issues using a fender for 16" wheels like the Single Axle Trailer Fender # HP46VR or Tandem Axle Trailer Fenders # HP84VR with your 285/75R16 tires. Although your tires may be large, they are only 1/2" taller when compared to a more typical 235/85R16 tire. The bigger difference comes from the tire width, but that won't impact the fenders.
