  I went out to our warehouse to measure the opening in the link for you on the Curt Safety Chain with S-Hooks # C80031. The inner measurement is 0.52 inches at the weld and the links are 0.66 inches on the inside so your 1/2 inch bolt will fit. I measured with a digital caliper so it is precise and have attached a photo to assist.

As for adding new ones, if there isn't room for a shackle, would it be okay if the chains were a bit longer than 35 inches? If you hadn't been doing so, crossing the chains under the coupler may be a way to use longer chains without them dragging. That way you could use S-hooks to more easily attach the chains.
