Hey Travis! For a bolt-on hitch that fits your 2021 Grand Cherokee Overland I recommend the etrailer Trailer Hitch Receiver # e39ZV. I'm not 100% sure what you mean by removing accessories, but you will have to temporarily remove the bumper to install the hitch. The same is true for any hitch that fits your Grand Cherokee.
Also, make sure your spare is 18" or smaller. Looks like the Overland comes standard with an 18" spare unless you got larger wheels and tires.
Since you mentioned a tow package I'm assuming you want wiring as well. The Curt T-Connector Vehicle Wiring Harness # C27BR plugs into the connection points behind your taillights and will provide you with a 4-way. If you want a 7-way you can upgrade it using the # ETBC7. For a ball mount, check out the # e66PR.

My son and I installed it about 2 hours if I remember correctly. Everything bolted into place. Make sure you torque properly. We had to remove the bumper trim, and wheel quarter panel trim, but that was simple. Buy a trim tool (plastic) to pop the plastic trim pieces
