Hey James, I can help you determine the correct hitch head height setting to use but I don't have the exact setting as that's just not info we have access to.
What you would need to do is measure from the bottom of your fifth wheel trailer pin box plate (not the king pin that hangs down, the surface it attaches to) down to the ground and compare that to the 39 inch measurement you took. The difference between those numbers is the height setting to use. This hitch has a height range of 16-7/8 - 19-3/8 Inch Tall.
If you can get me that measurement I can help further if you like.

I also have a 2021 RAM 2500, towing a 2021 Alliance Paradigm 310RL. I was curious about my tailgate height and clearance as well. With 20" wheels my tailgate height is 38" and the trailer clearance is right at 6". I am using the bottom holes as well. I hve backed into some pretty interesting places with no problems. I really appreciate the autoslide as with my previous RAM (2007 - 2500), I did manage to crease the back of my cab. I hope this helps.

I have a 2021 Ram 2500 with the same setup as you. Tailgate is 39” from ground with 20” wheels. You need to use the lower holes. I tried the upper ones and trailer was nose high and making back trailer tires take more of load. I switched to lower holes and it’s much better. Because truck sits so high you’ll probably still be a little nose high on trailer but it’s fine. Plenty of clearance between truck rails and trailer. I believe I sit at 6” of clearance and never had a problem. In general, use the bottom holes.
