Hey Kyle,
The etrailer Solar Charging System with Digital Solar Controller # e59FV is going to include the solar panels, mounting brakcets/hardware, wiring to run from the panels to the controller and from the controller to the battery, and a solar charge controller. The brackets come with butyl tape but you'll want to pick up 3 tubes of self-leveling sealant # 34427034145-1 to properly cover the mounting screws and prevent any water from leaking into the roof. To run your cables down to the controller you can either sneak them in through a roof vent or use an MC4 entry plate # 34273840.
These panels can put out about 10 amps per hour in peak conditions so you'd be looking at roughly 30 amps replenished per hour for your battery bank. Since you're wanting to boondock you'll want to check the amperage draw for each appliance per hour and multiple them all by the amount of hours you'll use them to see how much power/solar you'll need. I've attached a link to our solar calculator to make this process easier.
If you plan on running a microwave, TV, or other 110v AC powered appliance/accessory then you'll also need an inverter to convert your battery's 12v DC power to 110v AC. You will not be able to run an air conditioner off of your batteries because they simply require too much power. If you don't have an inverter then I recommend the Progressive Dynamics 2000 Watt Inverter w/ Transfer Switch # PD64FR. This inverter has a 2000 watt output and built in transfer switch to cut off once connected to shore power.
You'll also want to check the roof of your RV to ensure that you can fit three panels (55-1/2" long x 27-11/16" wide x 1-3/16" tall) up there and still have the panels close enough to connect them together.
