Will I have to do any trimming for the Stealth Hitches receiver to fit my 2023 Audi S5?

Yes, you will need to trim a small section of your rear fascia on your 2023 Audi S5 to use the Stealth Hitches Hidden Rack Receiver # 391AUDA5S518. I have included an image below showing the area needed trimmed on your 2023 as it is different than other model years.
If you plan to do any trailer towing you will need the Stealth Hitches Hidden Trailer Hitch Receiver w/ Towing Kit # 391AUDA5S518T or you can add the Towing Kit # 391CONVA7 later down the road if you decide you have a need for towing a small trailer.
