I have a 2021 Grand Design Transcend Xplor 265BH. Im looking to add a hitch at the rear, to mount a bike rack, etc. Any recommendations?

For RVs like your 2021 Grand Design Transcend Xplor 265BH the best solution for a trailer hitch would be a multi fit hitch like the Curt # 13703 which can fit all trailer frame styles that are 22 inch to 72 inch apart. This has a 3,500 lb towing capacity as well.
This would let you use an RV approved bike rack like the Thule Range part # TH9057.
