Can I install the Thule apex xt,thule helium or Yakima ridgeback bike racks on this hitch. And do I need an extended?

With the Curt Hitch # C84ER installed on your 2021 Mercedes-Benz GLC Class all three bike racks you looked into will work for your vehicle. I recommend The Thule Apex XT # TH9024XT. The Thule bike rack has the tilting feature which makes it easier to load and unload the bikes from the rack. It can hold up to 37.5 pounds per bike, and only weighs 35 pounds.
I would also recommend The etrailer Hitch Receiver Lock # e98881 to help with security of your bike rack. I will attach a install video below for the trailer hitch.
