Can I cut the flat 4 connector off and spluce those into my 7 way wires to get this kit to power the cameras on my 5th wheel?

We actually have an adapter finally that works to allow a Furrion Vision S observation system like the part # FOS43TASF or # FOS05TASF to work with the newer GM trucks like your 2021 GMC 3500 with the part # VGR64VR. This installs on the camera's power and ground wires to allow it to function.
The 7-way adapter # FR74FR that you mentioned does not work on the newer GM trucks.
