I have a Stowmaster 5000 that I had on my 2000 Wrangler but sold it and replacing it with a 2005 Cooper Mini what mounting plate do I need for the Cooper?

For your 2005 Mini Cooper. I recommend the Roadmaster EZ Base Plate Kit # 521876-1 so you can utilize the Roadmaster StowMaster Tow Bar # RM-501 you mention.
This base plate is very easy to disconnect thanks to its EZ Twistlock series brackets, features a hidden bracket design when not in use retaining the factory asthetics of your 2006 Mini Cooper, and includes all the hardware needed for installation.
