For the 2000 model year, Chevy had two different truck models, the C/K-series truck or the Silverado.
If you have the C-Series, there is a Universal Installation Kit available, part # RP30035, but there is not a Quick Install Kit.
For the 2000 Silverado 2500, if you want the outboard mount brackets and their mounting hardware only, use # RP56007. If you want the kit that includes the frame brackets, bed rails and all necessary hardware, use part # RP56007-53. Keep in mind that outboard mounting kits use the 48 inch long bed rails, and that if you use Reese frame brackets, you should use Reese bed rails. Mixing bed rails and frame brackets from different manufacturers can lead to an unknown weight capacity, because the parts have not been tester together.
An inboard frame bracket is also available, part # RP50064 or the kit with the bed rails, part # RP50064-58. Inboard frame brackets use the shorter 43 inch long bed rails.
The Reese Outboard Fifth Wheel Rail Brackets you mentioned, part # RP56001 are a fit for the 2011-2013 Chevy Silverado only, and would not fit your 2000 Silverado.
I have linked you to an video showing the # RP50064-58 being installed on a 2000 Silverado.
