Question:
Im interested in the trailer valet XL with a 2 5/16inch ball. My concern is that my trailer tongue weight might exceed the 1000 # limit. I have a 2021 Airstream 27.

I took a look at your 2021 Airstream Globetrotter 27FB and it has a GVWR of 7600lbs, so since tongue weight is typically 10-15% of the trailer weight you should see 760-1140lbs of tongue weight with the trailer fully loaded.
Since the Trailer Valet XL Trailer Dolly with Chain Drive - 2-5/16" Hitch Ball - 10,000 lbs # TVXL25 you mentioned has a 1000lb tongue weight rating you will need to use a tongue weight scale like the etrailer # e99044, or one of the methods shown in the included help article to measure your tongue weight. If your tongue weight exceeds 1000lbs then unfortunately we do not have a trailer dolly that is rated high enough for your trailer.
I included a few video reviews of the products mentioned for you to take a look at.
