Found tow hitch Class 3 e65ZR. WHICH OF THE BRAKE CONTROL are the easiest to install ? Are they a Plug and play ?

There is not a 7-way connector or factory trailer brake controller port on your 2021 Subaru Outback Wagon so the trailer brake controller will not be plug and play, but I do have an option that is pretty close.
First you will need to install a 4-way connector using the # 118467 which will plug into your Outback with no splicing. Next you will need to add the # ETBC7L which will plug into your newly installed 4-way connector and just require two connections. The black wire will need to be run to the positive terminal of your battery with the included 40 amp circuit breaker, and the white wire will need be grounded to the frame of your vehicle.
This specific 7-way connector was designed specifically around the Curt Echo Wireless Trailer Brake Controller # C51180 and it is the controller I recommend. The reason for this is it does not install inside of your Outback so there is no wiring needed in there, and you will not need to drill any holes in your interior to mount a controller. Instead the Echo plugs directly into the 7-way connector and then the trailer will plug into the Echo.
This is by far the easiest option to use for your Outback.
Now to mount a 7-way connector to the Draw-Tite Max-Frame Trailer Hitch Receiver item # DT73RR you were looking at you will need the Curt # C58000.
