Can you just buy the 5inch or 7inch monitor and keep your same camera to be able to add additional cameras?

There are two different versions of the Furrion Vision S Wireless RV Backup Camera System, the old system part FOS48TA and the new system part FOS43TA. If you have the old system then the only option to add more cameras would be to purchase a new complete package such as the Furrion Vision S Wireless RV Observation Camera System w/ Side Marker Light Cameras part # FCE48TASL-05. If you have the new system then yes, you can add more cameras by upgrading to the larger 5" part # FR97FR or 7" part # FR47FR monitor.
