Which hitch would you recommend for a 2011 Outback? I plan to use it with the Kuat Sherpa 2.0.

Because they do a slightly better job with their powder coat finish than Draw-Tite, I'd recommend going with a Curt Class III hitch. Curt offers 2 Class III models, part # 13390 which is a traditional hitch or # C13410 which is partially concealed.
The # C13410 mounts so that the crossbar is hidden behind the vehicle bumper, so that the only portion of the hitch that's visible is the receiver opening and the safety chain loops. The # 13390 would be fully visible.
The # C13410 is more difficult to install, and would require temporary removal of the rear bumper and fascia, but it will have a more appealing appearance. The # 13390 is much easier to install.
So, the appearance of a fully-visible trailer hitch on the back of your vehicle would bother you, you'll want to go with the # C13410. If you don't mind the way a typical trailer hitch looks, the # 13990 would be the choice for you.
Either rack would work fine with a Küat Sherpa 2.0 bike rack like part # SH22B
