if i want to make my own bunk boards why not use pressure treated pine. If not, what should i use

You certainly could make your own bunk boards using pressure treated lumber and bunk carpet like
# CE11372 if you wish. CE Smith doesn't use pressure treated lumber in their bunk boards because some of the chemicals used to pressure treat the lumber could leach into the water.
