I have a 1.25 hitch on my car and I have a bike rack that says it needs a 2 inch receiver. Is there some adapter I can use on my hitch to fit the bike rack ?

Yes, you can use a hitch adapter like this one from Brophy # HTAD which fits into a 1-1/4" hitch receiver and has a 2" receiver on the other end. If you want an adapter with a rise, there's also # HT5R which gives you a lift of 5 inches.
The main issue with hitch adapters though is that they reduce your tongue weight capacity by 50%. That means if your hitch used to have a 250lb weight capacity, whenever you use the hitch adapter you now have 125 lbs to work with. Just keep that in mind and check the weight of your bike rack and bikes.
