Question:
what is the best and easiest to install

Many trailer wiring harnesses are vehicle specific so I would need to know the year, make, model, and trim level of the vehicle to recommend the best wiring harness. The Curt hitch you referenced, # 11479 is designed to fit a 2008 Mitsubishi Lancer except the Evolution and 2009 to 2012 Mitsubishi Lancer except Evolution, Ralliart, and Dual Exhaust models.
For a 2008 to 2011, we only have the # 119178KIT available.
For a 2012 you can use the # C56127. In this case the Curt harness, # C56127, has T-connectors that plug in line with the vehicle wiring so you would not have to test the vehicle wiring and hardwire in the converter. It also requires a direct connection to the battery so it gets power for the trailer lights from the battery rather than the tail light wiring.
For the C56127, you are connected to the vehicle tail light wiring but that is just to get the proper signals for the trailer. The power still comes from the battery. On harness # 119178KIT, which is also a hardwire unit, the power and signals for the trailer lights all run through the vehicle tail light wiring. I have included some links that should help.
