Does Boone Outdoor Tailgate Table work with 2 inch trailer hitch? If not will an adaptor cause it be wobbly? other thoughts? Will it work for the car above re: using the trunk as our seats?

You can indeed use a hitch adapter to pair a 1-1/4" accessory like the Boone Outdoor Tailgate Table, part # BH70114, with a 2" receiver. Using an adapter reduces your tongue weight by 50%, so remember that if you plan on towing heavier accessories with a 1-1/4" shank.
If you are worried about sway, then you need an adapter that has a shorter shank. I recommend the Curt Adapter, part # C45770. It only has 4" between the center of one hitch pin hole to the other. I've linked to a video review of this adapter for you to look at.
Keep in mind that even though the Tailgate Table comes with an anti-rattle pin, another one should be used for the hitch side as well. Using two anti-rattle hitch pins for the two hitch pin holes will significantly reduce sway and wobble. I recommend the Let's Go Aero Hitch Pin, part # 63232. This pin also comes with a lock as an added bonus.
