Tilting Bike Racks like the Thule Camber # TH9058 would need to have the bikes removed before the rack can be tilted rearward, because the bikes would hit the ground and not only damage them but would also prevent the rack from fully tilting down. This is definitely not the most convenient thing if you need to be constantly in and out of the cargo area of your Odyssey.
I'd recommend a swinging bike rack like the USA manufactured SportRack Ridge Swing # SR2415. This rack would allow full access to the cargo area of your Odyssey by swinging up to 180° to the passenger side and allowing the rear hatch to open while up to 4 bikes are still on the rack.
For a hitch, I prefer the concealed look of the Curt # C64NR. The hitch crossbar is hidden behind the bumper cover, so all that's visible is the receiver tube and the safety chain hooks. This definitely provides a much better appearance, but the installation is more involved, and the hitch is more expensive. If you're not as concerned about how the hitch appears on the vehicle, I'd recommend the Curt # C13370 because of its much simpler installation and lower cost.
I've linked to a product demonstration video for the bike rack I recommended, as well as to install videos for both hitches. The videos will show you exactly what the hitches look like once installed, which should help you decide between the two.
