For your 2000 F-250 Diesel the trailer wiring you need depends on what your truck came with. If you have the factory 4-way then you would simply use the Curt T-Connector Vehicle Wiring Harness for Factory Tow Package - 7-Way Trailer Connector # C55243 to give you the functioning 7-way. You will also need a brake controller and harness if you want all the functions. I've linked the page to your options.
If you didn't have the factory wiring at all, then you would instead use the 4-Pole Hardwire Kit with Circuit Tester # 18252 and then the # ETBC7 to get your 7-way. I've attached a video and article to assist.
