I've got a 2019 VW Golf Alltrack with an EcoHitch on it and I'd like to add a trailer wiring harness. Which one should I use?

I recommend using the Curt Powered Tail Light Converter with 4-Pole Flat Trailer Connector
Item # C59236 with your EcoHitch # 306-X7315. This kit is a confirmed fit for your Alltrack and will hard wire into your vehicle's existing wires and provide you with a 4 way trailer harness.
Since you're planning on towing a trailer, if you also need a ball mount and hitch ball to complete your towing setup I recommend using the etrailer Ball Mount Kit # 989900 since it comes with 2 ball mounts, 2 hitch balls (1-7/8" and 2") as well as hitch pins and clips, and a carrying bag to keep everything in. This kit will allow you to tow a fairly common variety of towing setups with the 2 ball mounts and hitch balls, so you should be covered in a variety of situations. If you find that you need a ball mount with a different rise/drop to tow your trailer level, I've also linked our entire selection of 2" ball mounts to this answer as well.
