If you used a Reese Goose Box 5th-Wheel-to-Gooseneck Air Ride Coupler Adapter like part # RP85FR on the 2020 Avalanche 321RS then you would have the same amount of clearance for turning that you have now because its a direct replacement for existing pin boxes. It doesn't move the pivot point back like the Sidewinder pin boxes so it wouldn't add any clearance to the setup. It also attaches to a goose neck ball like part # BWGNXA2062 for your 2018 Ram 3500 short bed so you would need to get that as well.

I recommend to use a Sidewinder pin box on the Avalanche because it will provide you with the turning clearance you need with the short bed truck. To recommend a Sidewinder like part # RP34FR, for example. I would need to know the model number of your existing pin box to tell you which exact model is a direct replacement for your existing pin box. Normally that information is on a sticker on the pin box itself.

I recommend to use the Reese M5 5th Wheel Trailer Hitch for Ram Towing Prep Package part # RP30918 which will install into the OEM prep package of the truck. The M5 has a single piece jaw that provides a secure connection with the king pin to eliminate the chucking you may experience with looser jaw connections of the other brands. Reese also recommends this hitch with the Sidewinder. You can use the majority of fixed fifth wheel hitches with the Sidewinder as long as the manufacturer does not recommend against it.
