If I install your hitch, will it void the new car warranty on my 2020 Honda Odyssey, like the dealer says?

Absolutely not, you are protected under the Magnuson-Moss Warranty Act, which makes it illegal for companies to void your warranty or deny warranty coverage simply because you used an aftermarket product, unless they can prove the aftermarket product caused the problem.
With that cleared up, the hitch I recommend for your 2020 Sorento is the etrailer.com Trailer Hitch # e98855 because its installation is pretty simple and straight forward and does not require fascia trimming.
I'm not sure if you plan on doing some towing or if you plan on using the hitch to haul a bike rack or cargo carrier, but I'll list some recommendations below, just in case.
