Looking for a hitch for 2010 Prius in order to pull a boat trailer, with fishing boat small, alumacraft type boat and outboard motor. Will the Draw-Tite # 24847, Draw-Tite # 24967, or some other hitch you carry work best? Is 2000lb rating good enough for such a load?

Draw-Tite hitches # 24847 and # 24967 are both good choices for your 2010 Prius but if it were me I would choose # 24847.
They share the same 2000-lb maximum towing capacity and both are easy no-drill installations. The only noteworthy difference between them is that model # 24967 will be slightly less noticeable on the car since its main cross tube is hidden behind the rear fascia. If you don't care about this then you can save a few dollars by going with hitch # 24847 which is shown in the linked photo. The difference is purely cosmetic. An install video is included for each one.
The recommended ball mount you can use is part # 3593 and with it you can use the hitch ball size to match the trailer coupler, either 1-7/8-inch # 19256 or 2-inch # 19258. The coupler on the trailer will tell you which size you need.
Small aluminum fishing boat trailers typically do not have brakes so all you'll need for wiring is a basic 4-pole harness # 118505 to power the trailer lights. This wiring kit is an easy plug-in installation as you'll see in the linked video. I also suggest some simple towing mirrors # KS3990 to let you keep eyes on the trailer and other motorists behind you.
I recommend checking your Prius owner's manual to confirm that the total boat/trailer weight is within the car's capabilities.
