Hi on the original plug in location there is a metal cover with 4 screws securing it. When I removed it there was what looked like factory 7 pin wiring socket which plugged into the plate. How do I remove the plate from socket? Will the plug and go wiring work?

I do have the needed parts to provide you with a 7-way trailer connector but unfortunately, I don't have any information on the plate/socket you are referring to. The best place to look for advice on this would be in your owner's manual but if not listed here then your local Volkswagen dealer. If you send me a photo I may be able to provide advice as well if the above two options fail.
The 7-Way Trailer Adapter for VW, Audi, and Porsche Towing Trailers with LED Lights part # C57003 that you referenced is simply an adapter to make a 7-way compatible with LED lights. I suspect you may have a US CAR (see photo) connector installed but not a 7-way trailer connector. If that is the case then you can use the Pollak Replacement 7-Pole, RV-Style Trailer Connector Socket part # PK11893 to add a 7-way.
