Hello. I am wondering which hitch would have the best ground clearance for my 2018 Ford Edge. Thank you.

For your 2018 Ford Edge the Curt Class III Trailer Hitch Receiver # C13234 will have the best ground clearance when installed. The hitch receiver will sit about a 1/2 inch higher from the ground compared to the similar Draw-Tite # 75214 that is also available for your vehicle.
This Class III hitch features a 4,000 pound towing weight capacity and a 600 pound tongue weight limit. It will use existing holes in the Ford Edge's frame for a no-drill installation.
I have attached an installation video on the 2017 Ford Edge that you can use for reference. The process will be pretty much identical on your 2018 model.
