Question:

Hello: I am thinking of buying a standard model prius and would add a hitch and hitch rack onto it for my bicycle. How would the gas mileage be affected by this? Thank you

For a standard 2019 Toyota Prius, I recommend the Curt Trailer Hitch Receiver - Custom Fit - Class I # C11473. If you are looking for a different model year, this will fit 2016-2019 models. Then you can add a bike rack like the Kuat Sherpa you asked this from, but you need one compatible with the 1-1/4 inch class 1 receiver so you'd want # SH12G for the similar model compatible with a Prius hitch. This is a really nice bike rack that will fit bikes up to 40 lbs each and includes the locks to secure them. The gas mileage won't be noticeably impacted by adding a hitch and bike rack like this. It will only be adding 68 lbs total before adding bikes and the location will keep wind drag to a minimum even with bikes loaded.
