what is the best way to trim the facia on my c300? What tool do you usually use? I need to get it done right the first time. It is the part that makes me a bit nervous. I need some reassurance if you know what I mean.

There actually isn't any fascia trimming required to install Curt trailer hitch # C11030 on the 2009 Mercedes C-Class. I have linked a video showing an example installation as well as the instructions showing the steps to install the hitch.
For future reference though using a rotary tool is the easiest way to trim fascia and it also provides the cleanest cut. Other methods include using snips of some kind (depends on the material being cut) as well as a sharp box cutter.
If you want to use the hitch for an accessory such as a bike rack or cargo carrier then you have to make sure the accessory is rated for use with a Class I trailer hitch. Also, with a bike rack, you are limited to 2 bikes maximum on a Class I hitch.
Curt also says you have to use stabilization strap # 18050 when using this hitch for any non-trailer load (such as a bike rack or cargo carrier) per their warranty requirements. I have linked the Class I compatible 2-bike racks and cargo carriers for you.
