Starting with the trailer hitch, the Draw-Tite Max-Frame Trailer Hitch Receiver # 75236 referenced in your question will indeed fit your 2011 Toyota Tacoma PreRunner and is the exact hitch I would recommend. This Class III trailer hitch will use existing holes in the truck's frame for a no-drill installation. It will provide a 2 inch receiver opening and a 5,000 pound towing capacity, although I also recommend checking the towing capacity of the truck itself. This information will be listed in your owner's manual and you will simply need to follow whichever limit is lower, the truck's or the hitch's.

The Tekonsha T-One Vehicle Wiring Harness # 118496 you also mentioned is confirmed to fit your Tacoma if it did not come with the factory 7-Way connector. This custom-fit harness will connect directly to the built-in ports behind the driver and passenger side tail lights on your truck. I have attached an installation video on the 2013 Tacoma that you can use for reference.
To tow a trailer, you will also need a ball mount. I recommend looking at the etrailer.com Ball Mount Kit # 989900. This kit includes two ball mounts; one with a 3/4 inch rise or 2 inch drop and another with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch and 2 inch hitch ball.
