I purchased: Triple-Axle Trailer Hanger Kit for Double-Eye Springs - 3-1/4inch Front/Rear/Center. What is the torque spec for the included grade 5 bolts?

For the 9/16 inch diameter shackle bolts included in the Redline Triple-Axle Trailer Hanger Kit # APTT5 referenced in your question, you will want 65 to 95 foot pounds of torque.
This kit can be used to attach 6 leaf springs to your trailer frame. I have also included a chart that will help you determine the hanger location based on the type of leaf springs you have for your trailer.
