The Curt Spare Tire Carrier # C31006 weighs just about 16 pounds.

Yes, you will be able to mount your 225/75R16 tire with a 8 lug wheel on the etrailer Hitch Mounted Spare Tire Carrier #e98ZR. I have included an image below with your same size tire and an 8-lug wheel mounted on the carrier.
