Is it deep enough for 1/2 for pop rivets/gasket to be concealed?

The leg length or the depth that the garnish part # 2756 has is right at 2 inches. From the picture you submitted it looks like you installed the roof vent part # 9106 with the mounting flange on the inside of the trailer. The vent should be installed with the mounting flange on the outside of the trailer and then use the garnish to cover up the opening you cut.
In that configuration the garnish would conceal the hole you cut and the rivets. It can also be trimmed shorter if needed.
