We have just what you are looking for! To start, I recommend the Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" # C37RV. This has a 2" receiver, so you have a ton of options for accessories (bike racks, cargo carriers, etc), and with the 4,000 pounds of towing capacity and 600 pounds of tongue weight capacity, it will carry and pull whatever you need it to. However, this is going to be rated higher than your vehicle, so I encourage you to check your owner's manual for you towing and tongue weight capabilities.
Moving on to the wiring, you are going to want the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C34FR73HY. This is plug and play and is specific to the Hybrid or SX Sorrento for the 2025 and 2026 model years. You will need to run one wire to the battery for needed power, but this really shouldn't be too difficult of an install.
