How do I decide which size would work best for me?

You could always go with the taller 60 inch guide-ons, # CE27640, and trim as needed. But if you go to different places to use the boat, you never know how much of the trailer you will need to submerge and may find that the 40 inch would be too short in some cases. You would want the top of the guide-on taller than the boat as well (when loaded on the trailer). I have linked the installation instructions for you.
