Our 2017 Winnebago Adventurer 37F on the 26K chassis feels tiring to drive long distances. Would a Safe-T-Plus help, or should we focus on sway bars?

Cheryl, the Safe-T-Plus # ST28MR should be your first step. Sway bars handle body roll, but steering stabilizers fix that “wandering” feeling. This model keeps your wheel centered automatically, so you’re not constantly correcting on long trips.
You can add sway bars later for even more stability, but most owners say the stabilizer alone feels like a new coach.
