Hey Tom.
Yes, you can absolutely use air bags with your 2023 GMC Sierra 2500 that has a 5th wheel hitch.
The # AL57541 you were looking at will work, but in my experience are overkill for a 3/4 ton truck and cause a stiffer unloaded ride than the 5,000lb air bags, so unless you are towing basically all of the time, and your trailer is at the absolute max capacity of your truck, I'd go smaller.
The # AL57341 will work better in my opinion, and will work on your truck if its 4WD, or you'll need a Firestone kit # F2613 if you have a 2WD truck.
You do not HAVE to go with an on-board compressor. I actually didn't have one for the first 2 years I had bags on my truck, but recently installed the Airlift # AL74000EZ and am really happy with it. The install was really straight forward, and being able to use a remote inside of my truck instead of manually airing up each Schrader valve when I'm ready to tow has been a game changer.
