Yes, you can! Actually the B&W Turnoverball Underbed Gooseneck Hitch item # BWGNRK1019 fits all three bed lengths and the diesel models of the 2023 GMC Sierra 1500. This system includes custom fit brackets that bolt into existing holes in your Sierra's frame.
This underbed system allows you to store the 2-5/16" hitch ball upside down and inside your bed when you are not using it. This gives you full access to your bed when you're not towing. The locking handle is easily accessible inside your driver's side rear wheel well.

Since you have the shorter 6-3/4' bed you may be interested in the 4" Offset Ball for B&W Turnoverball Gooseneck Trailer Hitches item # BWGNXA4085. This offset ball pushes the connection point with your trailer back 4" to give you some extra turning clearance. It has a 20,000 lbs capacity and works exclusively with B&W gooseneck hitches.
To make towing with a gooseneck trailer easier I recommend adding the Curt 5th Wheel/Gooseneck Custom Wiring Harness item # C53CR. This harness puts a 7-way connector in the bed of your truck and allows you to keep the one on your bumper. This makes hooking up to your gooseneck trailer easier and more convenient.
