The best hitch for a 2023 Chevy Bolt EV is the Draw-Tite Hitch item # DT47GR. This hitch is custom fit and bolts to your Bolt with included hardware. This is a class I hitch with a 1-1/4" receiver.

I really like this hitch because the crosstube mounts behind the bumper cover leaving only the 1-1/4" receiver visible. I have attached an installation video below so you can see what this hitch looks like once installed.

If you are planning on towing you will also need a wiring harness item # 119250KIT and the Draw-Tite Drawbar item # 3593 and then for hitch balls item # 19258 for a 2 inch ball or item # 19256 for a 1-7/8 inch ball.
