What model do you recommend for a trailer hitch rise of 6 to connect a 3,000lb tear trailer with a lock-n-roll off road articulating hitch? I assume it must be class V and support a tongue weight up to 250#. Thanks in advance for the recommendation.

A High-Low adapter like the one you looked at is only intended for flat towing, not towing a trailer. Regardless, I would not use a separate adapter with the Lock N Roll. Use of your typical adapter will reduce the capacity of the hitch by 50%. It also isn't the best idea to add in an additional part with the design of the system.
The best option is to get the Lock N Roll Articulating Hitch w/ 5-Position Channel # 336VS503515. This has a maximum rise/drop of 8-1/4" with 2" hole spacing which will get you the 6" rise you're looking for. Since this is part of the Lock N Roll system there won't be any concerns about safety and security, or extra unwanted movement from an adapter.
