What is that Ethernet connection for? It seems weird to have that on a power unit like this.

Great question!
The RJ45 - more commonly known as Ethernet - port on the Redarc Industrial Pure Sine Wave Inverter # RED35RR is for connecting this to the Remote # RED95RR or the RedVision Vehicle Management System # RED89FR.
Redarc likes to use the Ethernet connection for this type of stuff because it's common to find so easily replaceable if need be, and they don't have to reinvent the wheel just to make their products work. You'll find this type of connection woven throughout a lot of their electrical products, including their trailer brake controllers!
