can i purchase a spray head replacement part for a EM65CR kitchen faucet? i dont need the whole assembly.

The spray head of the Empire Faucets RV Kitchen Faucet w/ Pull-Down Spout # EM65CR is not a replaceable part so you would need to purchase the whole assembly. Unfortunately they don't really make any replacement parts available to allow people to fix anything.
If you end up having to replace the faucet I've attached a video below to help walk you through the installation process.
