I see there's a number of different hitches for the 2023 Hyundai Palisade and Im in a bit of analysis by paralysis so to speak. Is there a big - or any - difference between the Curt and etrailer hitches? Or am I overthinking it?

You're not overthinking it, as some hitches can have pretty big differences, so it's always a good idea to check. I'll go ahead list the part numbers for each of the hitches that fit your '23 Palisade, then talk about the difference.
- etrailer Trailer Hitch Receiver # e95ZR
- Curt Trailer Hitch Receiver # C13427
There is just a single difference between the two, which is the finish. The Curt has a glossier finish than the matte black finish of the etrailer hitch, so you can choose which you prefer.
So unless you really like the finish of one over the other, I'd just go with the hitch that has the best price (scroll down on this page and the hitches and price will be listed there).
