Question:
I would like to know if my 2016 GMC Canyon can be towed on a 2 wheel car dolly like the ones Uhaul rents? The front wheels of the truck would be on the dolly and the rear wheels would be on the ground.

Yes you can use a tow dolly like the Demco Kar Kaddy X Tow Dolly w/ Disc Brakes - Tilt Bed Frame # DM9713093 to tow your 2016 GMC Canyon.
This is required if you have the two wheel drive version, however you're only capable of towing the 4WD with a dolly if the vehicle has a neutral and a four wheel drive low setting.
Additionally, it is stated on page 329 of your owner's manual that the front wheels will need to be the wheels on the ground, and the rear wheels to be on the dolly, opposite of what you mention.
