Hey there! Just watched the video for the furrion backup camera and he mentioned an adapter for newer model GM trucks. What adapter would I need for a 2020 Silverado 1500?

For the newer GM trucks like your 2020 Chevy Silverado 1500 you do need to use the Furrion GM adapter part # FR87PR with the Furrion Observation Vision S systems like the part # FOS43TASF that you referenced. This is the adapter that the video you mentioned was referencing.
