I have a 2001 E350 Super duty, cargo van with factory mirrors. Will the Longview CTM2500 mirrors fit?

If your mirror appears like the one shown in the photos on the product description page, as well as in the video I've linked you to, the mirrors will work great for you.
If your mirrors are different, you can use a universal towing mirror like the Cipa Deluxe Door Mount Mirror, part # 11650. Admittedly, the mirror isn't the best looking thing on the face of the earth, but it works wonderfully, and is very highly rated by our customers.
